White chicken chili offers a fresh twist on traditional chili recipes. It combines tender chicken, creamy beans, and a blend of spices that create a comforting yet vibrant dish. This recipe draws inspiration from a Watts Sauce enthusiast, known for their love of bold flavors and quality ingredients. This recipe was shared to us by one such Watts Sauce Enthusiast. Mr. Libo Ramano from Wisconsin wanted us to share this delicious White Chicken Chili recipe with the world. If you want a chili that’s both hearty and full of character, this white chicken chili recipe is a perfect choice. So here we go!
Why Choose White Chicken Chili?
White chicken chili stands out because it uses white beans and chicken instead of the usual beef and red beans. This makes it lighter but still packed with protein and fiber. The dish balances creamy textures with a spicy kick, making it satisfying without feeling heavy. It’s ideal for those who want a warming meal that’s a bit different from the classic chili.
Watts Sauce fans appreciate how this recipe highlights the sauce’s unique flavor profile. The sauce adds depth and a subtle heat that complements the chicken and beans perfectly. It’s a great way to enjoy a homemade chili with a special touch.
What You’ll Need For Libo's White Chicken Chili
Ingredients
1/2 cup of corn or vegetable oil
1 extra large white or yellow onion, diced
1 green, 1 yellow, 1 red or orange bell pepper, diced
1/4—1/2 cup fresh parsley, chopped
2 pounds skinless chicken breasts, cut into around 1/2 inch chunks
6 to 8 cloves of garlic, thinly, minced
1/4 cup chili powder
1 heaping tablespoon ground cumin
1/2 tablespoons salt
1/2 tablespoon black pepper
1 heaping tablespoon brown sugar.
12oz pork Chorizo
28 ounce can whole tomatoes (not drained)
15 ounce can of stewed tomatoes (not drained)
1 cup Watts Sauce.
15oz can chili beans, (not drained)
15oz can black beans, drained
15oz can of kidney beans, drained
These ingredients combine to create a chili that is creamy, spicy, and full of flavor. The Watts Sauce adds a unique heat and tang that lifts the dish beyond the ordinary.
Step-by-Step Preparation
Follow these steps to prepare your white chicken chili:
Directions
1. In a large Dutch oven or soup pot, add oil over medium heat. When hot, add diced onions, diced bell peppers and parsley. Stir to cook evenly. Next add garlic and skinless chicken chunks, then add chili powder, salt, black pep-per, cumin and brown sugar. Stir well to blend. Cook for 15 minutes.
2. Now add pork Chorizo, whole tomatoes (I like squishing mine by hand, but watch out, they squirt all over), stewed tomatoes (slice the larger pieces in half), and one level cup of Watts Sauce.
3. Continue cooking over medium heat, occasion-ally stirring, do not let burning start on bot-tom of pot! After about 15 minutes of steady simmering, add the three cans of beans. Continue cooking, bringing back to a simmer for 20 to 30 minutes more, gently, stirring occasionally.
4. Serve with shredded cheese, sliced hot peppers and added green onion. I like French fried onions, sharp cedar cheese and Jalapenos on mine.
This method ensures the chicken stays tender and the spices infuse the broth, creating a rich and satisfying chili.
Tips for the Best White Chicken Chili
Use cooked chicken with some fat for more flavor. Rotisserie chicken is a convenient option.
Adjust the heat by varying the amount of cayenne pepper and Watts Sauce. Start with less and add more if you like it spicier.
For a creamier texture, stir in a few tablespoons of sour cream or Greek yogurt just before serving.
Serve with toppings like shredded cheese, avocado slices, or tortilla chips for added texture and taste.
Leftovers taste even better the next day as the flavors continue to develop.
Serving Suggestions
White chicken chili pairs well with simple sides that complement its bold flavors. Consider serving it with:
