Ingredients

Gather these ingredients to kick-start your culinary adventure:

  • 3 pounds of chicken wings

  • 2/3 cup of all-purpose flour

  • 3 tablespoons of butter, melted

  • 1/2 cup of Watts Sauce

  • 2 teaspoons of Watts Hot Sauce

  • 1 tablespoon of paprika

  • 1 teaspoon of salt

  • 1/2 teaspoon of black pepper

Preparing these ingredients in advance will make the cooking process seamless and enjoyable.

Preparing the Chicken Wings

Start by prepping the chicken wings. Use a sharp knife to remove the wingtips and discard them. Then, slice the wings in half at the joint.

Place the cut wings in a large plastic bag. Add flour, 1/4 teaspoon of black pepper, and 1/2 teaspoon of salt. Seal the bag and shake it until the wings are completely coated. For optimal results, refrigerate the wings for at least three hours, or even overnight. This allows the flour to stick better, giving your wings a crispy finish.

Making the Blue Cheese Dip

While your wings marinate, whip up a simple blue cheese dip. This rich and creamy dip balances the spicy flavors of the wings beautifully. Mix together 1 cup of your favorite blue cheese dressing with a splash of lemon juice and some freshly cracked black pepper. Set aside to enhance the flavors while the wings cook.

Baking the Wings

Preheat your oven to 400 degrees Fahrenheit. Line your baking sheets with aluminum foil for easy cleanup, and arrange the chicken wings on the sheets. Discard the bag with the leftover flour.

Bake the wings for about 45 minutes, turning them every 10 minutes to ensure they are evenly cooked and avoid sticking. When done, allow them to cool slightly before handling.

Creating the Marinade

As the wings cool, prepare the marinade. In a bowl, mix together the melted butter, Watts Sauce, paprika, and the remaining salt and black pepper. Don't forget to reserve 2 tablespoons of the marinade for basting later on.

Marinating the Wings

Transfer the cooked chicken wings back into a clean plastic bag. Pour the marinade over the wings, seal the bag, and shake it until the wings are well coated. Let them marinate at room temperature for about 30 minutes. This step infuses the chicken with flavor, enhancing every bite.

Broiling the Wings

After marinating, it’s time for the final touch. Place the wings on two baking sheets lined with aluminum foil and set them under the broiler, keeping them 4 to 5 inches from the heat source. Broil for about 10 minutes, flipping the wings occasionally to ensure they cook evenly.

When the wings turn golden brown and crispy, remove them from the oven. Baste the wings with the reserved marinade for an extra kick of flavor.
